Thanksgiving seemed so far away when we began this recipe sharing with the folks from The Food Channel. Now, today the news is different; I hate to say this, but Thanksgiving is just one week away.
Time to think of a different approach to sweet potatoes. The price is right, and they’re plentiful so no problem doing something more creative than just baking them whole skin and all. I know, that’s a common favorite so don’t blow the expectation, the tradition. Also there are plenty of people that prefer the sweet potato pecan pie approach.
If you want to try something easy and a little different then I’d go with the Sweet Potato Souffles. We’re talking 15 minutes prep time; hard to beat that with something that promises such great taste.
